Farinata (Savory Chickpea Pie)

Here is a really good and simple recipe to prepare, I state that it is not the original recipe but is slightly revisited for a lighter version, with little oil, but the success is guaranteed!
Let’s see how it is prepared…

Ingredients:

  • 250 gr of chickpea flour

  • 700 ml of water

  • 4 tablespoons of extra virgin olive oil

  • 3 tablespoons of corn seed oil

  • Salt and pepper to taste

Preparation

1. In a bowl put the chickpea flour (sieving it) and slowly add the water, continuing to mix with a whisk to remove all lumps.

Stirring will form a persistent foam: remove the surface foam with a colander or with a slotted spoon.
Let it rest for about 4 hours at room temperature, stirring and foaming often (even 3 or 4 times every hour).

2. After 4 hours, add 4 tablespoons of extra virgin olive oil and mix with the whisk.
Let it rest for another 4 hours, stirring occasionally and, if necessary, continuing to remove the surface foam.
The batter is finally ready to be cooked. At this point, adjust with a pinch of salt and plenty of pepper.
Grease a pan with low edges, about 30 cm in diameter, with 3 tablespoons of corn seed oil, then pour the batter into it.

3. At this point you can bake in a preheated oven at 220°C for about 30 minutes: the pie is ready when the surface is golden and crispy. If necessary, after 30 minutes of cooking, turn on the grill for 5-6 minutes.

Remove the pie from the oven and let it cool slightly, cut it into squares or rhombuses or wedges and serve with vegetables or simply with pepper and rosemary.
